Ingredients for Fresh Egg Noodles:
Wheat flour: 350g
Eggs: 3
Vegetable oil: 2.5 tbsp
Salt: a pinch
Step-by-Step Guide for Fresh Egg Noodles:
Step 1: Mix and knead the dough
Put 300g wheat flour in a bowl, add 3 eggs, 1 tbsp vegetable oil, and ½ tbsp of salt. Mix until the ingredients combine, then knead for 7–8 minutes until the flour is smooth and no longer sticky. Cover with plastic wrap and let it rest for 30 minutes.
Note: to prevent dry of flour, can put a little bit warm water into flour in kneading process.
Step 2: Roll out the dough and cut into small noodles
Divide the dough into 4 portions. Roll each portion into a thin sheet and cut it into small noodles. The thick and thin of noodle as your request.
Use the knife to cut the roll noodle into the small strands and sift the dry flour to prevent them from sticking together.
Step 3: Boil the noodles
Boil water in a pot, add 1.5 tbsp vegetable oil, then cook the noodles for 5–6 minutes until they float. Boil more 1–2 minutes, then drain and soak in cold water to cool.
