Dough Ingredients:
Wheat flour: 300g
Instant yeast: 5g
Cornstarch: 50g
Sugar-free fresh milk: 70g

Ground pork with fat: 200g
Shallots: 15g
Mushrooms: 50g
Cornstarch: 1 tsp
10 boiled eggs
Seasonings: Salt, sugar, pepper, cooking oil, rice wine, oyster sauce

Step 1: Prepare the ingredients
Wash and drain the mushrooms, then chop finely. Peel and grind the shallots.

Step 2: Marinate the meat
Mix the ground pork with chopped mushrooms and shallots. Add 1 tsp cornstarch, ¼ tsp salt, ¼ tsp sugar, ¼ tsp pepper, ¼ tsp oil, ¼ tsp rice wine, and 2 tsp oyster sauce.
Mix well, cover with plastic wrap, and marinate for 1 hour.

Step 3: Divide the filling
After marinating, divide the mixture into 10 portions, each weighing about 30–45g, and place a piece of boiled egg in the center.

Step 4: Prepare the dough
In a bowl, put 300g of wheat flour, then make a hole in the middle, add 5g instant yeast inside that hold and cover by a pot lid.
The next, mix well of 50g cornstarch, 1g salt, and 75g sugar by spatula.Gradually add 70g milk and 90g cold water into the wheat flour bowl, mix well, and knead for 1 minute.
Prepare the dough
Increase the speed and knead for 5 minutes until the dough becomes smooth. If the flour is dry, you can add 10gr of cool water and mix for 2-3 minutes.
Add 20g oil and continue kneading for more 5 minutes. Rest the dough for 2-3 minutes before kneading again until smooth.
Divide the dough into 10 equal parts, shape them into balls, and cover with a cloth to rest for 15–20 minutes.
Step 5: Shape the Steam Bun
After enough the rest time of dough, roll each dough ball flat, place the filling in the center, and fold the edges to form pleats. Cover with a cloth and let it rest until doubled in size.

Step 6: Steaming
Put the Steam Bun in steamer basket with about 3cm of water, then turn on high heat and steam for 10 minutes. After the water boiled, reduce heat to small and steam for around 15 minutes until cooked. Open the pot lid and leave the Steam Bun in the pot for 5 minutes before taking it out.
